Distiller's Enzyme Alpha-amylase is a bacterially-derived, powdered alpha-amylase enzyme for breaking down (or liquefying) gelatinised starch to yield short chain dextrins and simple sugars prior to saccharification with glucoamylase and fermentation by yeast.

Tinting Agent Add to adjust the darkness of spirits. Measurements are included in the Whiskey Profile kit. -
Diammonium Phosphate ( DAP ) - 200g
Food grade diammonium phosphate (DAP). This is pure fermentable nitrogen and phosphorus to help provide a healthy fermentation in low nutrient washes. A key ingredient for many sugar-based distilling washes but can be useful in any fermentation where yeast nutrients need to be added.
The Ted's Fast Ferment Vodka recipe requires 1/2 teaspoon for a 23L wash with 4kg of sugar.
