Super Sauvin - Freestyle x Phantasm Thiol Enriched Blend - 2025 Crop Year

Super Sauvin is an exciting new blend born out of a collab with thiol-related research collaborators at Phantasm where they created a thiol enriched blend of thiol precursor laden Phantasm, combined with Nelson Sauvin that has high concentrations of cysteine bound 3SH precursors, bound 3S4MP precursors and terpene alcohols.  

Super Sauvin is intended for whirlpool use and/or active fermentation dry hopping with thiolized yeast strains. This blend looks like, and should be used in the same manner as, a normal T-90 hop pellet. Phantasm is incorporated into the hops prior to pelleting and we’ve created a homogenous blended pellet.  Super Sauvin is intended to provide a wider array of thiol precursor compounds than is available from Phantasm alone. While we aren’t yet able to test for the full array of these thiol precursors, we know that bound 3S4MP and 3SO are present in addition to the bound 3SH from Phantasm.

This Super Sauvin lot has field aromas of Guava, Sweet Citrus, Nectarine.

So full bio transformation of these compounds can occur, a Thiolised strain like White Labs PurePitch® Next Generation WLP077 Tropicale Yeast is recommended.
For non Thiolised yeast strains Wyeast - London Ale IIIFermentis 34/70K-97
Lallemand's VerdantPomona and Diamond have been reported to have some biotransformative ability also.

There are ongoing efforts to develop non GMO thiol capable strains and we expect to see new strains emerging on the market shortly.

Beer that is fermented with a non-GMO strains, would benefit from layering hops containing the thiol compounds throughout the brew.

  • A little in the mash to benefit from the proteinases and peptidases that are present - especially during the protein rest (45-55 Deg C)
  • At whirlpool to help free up some of the bound thiols.
  • Active fermentation dry hopping.

We recommend whirlpool dosage rates from 4 g/L upwards depending on style and yeast strain.

Phantasm hops will work across a range of styles, from IPAs through to Lagers.
Hops such as Motueka, Citra, Nelson Sauvin, Galaxy and Simcoe will work well in dry hop, but also feel free to experiment!
